Bouchée

High end California cuisine restaurant in the heart of downtown Carmel-by-the-Sea. They don't grind the beans to order. But using a single-group, classic Fiorenzato, they produce an espresso in a tall cup with a thicker, congealed dark brown crema. It's light on flavor -- a little flat even. But what flavor is there is mostly mild spice.
