| Chef Piero Alciati takes his mother's cooking to this gastronomic complex and Pollenzo castle grounds. The setting is exquisite. The food here equally so. Using a three-group Faema in the back kitchen, they pull espresso shots with a coagulated but thinner medium brown crema. It has a splotchy consistency with some of the espresso surface exposed. But the shot is the perfect size. The resulting cup is potent and herbal (thyme, etc.). A good restaurant espresso. ?2. |
