Piero Alciati of Ristorante Guido di Pollenzo and various other food illuminaries in the region have together formed Eataly, which is akin to SF's Ferry Building Marketplace on crack. Located in the former premises of the Carpano vermouth factory, across the Lingotto complex used by FIAT (and more recently for the 2006 Winter Olympics), it's a massive building filled with Slow Food markets and restaurants. At the lower level further in, this café features three dual-group Gaggia machines and a lot of Italians needing their espresso fix. They sell beans under the Hue Hue Café name, and their primary blend consists of 40% Guatemalan San Pedro Necta cru, 30% arabica, and 30% robusta. With it they produce shots with a medium brown crema with textured speckling and a great, potent aroma. It has a pungent, herbal flavor. Naturally best served as a ristretto. ?0.85.
