| Established in 1955, this indoor food counter is technically Carmel's oldest Italian restaurant. Using a three-group, manual, brass eagle Rancilio machine with "Paolina's" detailed on the back, they pull slow shots of espresso that run a bit full in a paper cup. It has a richer medium brown crema, however, and a smoky herbal flavor with a slight bitter edge. There are a lot worse espressos in this town. [CLOSED: Now Carmel Belle.] |
