Replacing the former Plumpjack restaurant, Chef Crenn packed her Michelin star up from Luce and started her personal, 40-seat restaurant here in early 2011. It's designed like a modern restaurant in Lisbon, and the food emphasizes small, potent tastes that might seem like an Atkins diet for the lack of carbohydrates. In the rear kitchen, they use a single-group machine of unknown origin (there is a "DFC" on the label) with beans from Roast Coffee Co. They pull shots with a thinner layer of medium brown crema with whiter heat spots. It's not an attractive espresso by any means, and the pour runs rather large. While the flavor is somewhat flat, it manages not to be watery and carry a potency at the same time - putting it in the territory of heavy drip coffee. Served in designer Guy Degrenne cups.
