Loud, hip restaurant recently replaced Timo's in 2005. Good food - which is more than We could say for their espresso for their first few years. Using a two-group Elektra and Graffeo beans, they produced a sadly thin ring of pale crema. Flavorwise, it tasted of wood and mild spices ... diluted in gallons of water. (A high price to pay for good materials but apparently zero staff training.) by 2011, they got their act together using Sightglass coffee, they now pull shots with a potent aroma and healthy-looking mottled medium brown crema. It's shocklingly dark and body-driven for the normally auperbright Sightglass coffee. With a brighter herbal flavor. Much improved.
