Former experts from Peet's Coffee and Spinelli's (since bought out by Tully's) originally formed this newer roaster. Sal Bonavita (who owned Peet's Coffee in the 1980s) and Arnold Spinelli (who owned the Spinelli's chain) have also partnered with other small North Bay coffee businesses to open new cafés.
In 2007, they renamed/rebranded themselves from Bonavita Coffee & Tea to LaCoppa Coffee. By 2012 (if not before), Sal Bonavita was out of the picture and it was just Arnold Spinelli. Their preor roaster location at 40 Louise St. in San Rafael, CA was turned over to Weaver's Coffee, and LaCoppa took up residence on the main square in downtown Mill Valley, CA.
