The Slow Food-approved Pausa Cafè cooperative produces "Hue Hue Café" (not to be confused with Cafe Hue Hue of Bellingham, WA). This Torino-based roaster of Guatemalan coffee deals with about 150 small farms to produce its lot. (Hue Hue, pronounced way-way, is short for Huehuetenango - a region of northwest Guatemala). Of greater curiosity is that the roasting facility is in Vallette, a Torino prison, and has been staffed by prisoners since 2004.
