Notes
Renato and Helene run this roasting "lab" (a Deidrich IR-7) and café where they work with some interesting microlot coffees. The emphasis is on blending ratios for quality ingredients in their espresso, and they tend not to roast coffee for a specific brewing method. Renato learned his trade in Norway (Tim Wendelboe, included), and it reflects somewhat in his roasting styles.
