Founded in 2013 by Xavier Alexander (ex-Intelligentsia) and Darko Arandjelovic (of Caffe Streets), this wholesale-only (well, and some subscriptions) roaster has received a ridiculous amount of press in recent years. Though in their first year of operation, they won a Good Food Award for their Kenya Kayu (even if coffee is no more "food" by the dictionary definition than heroin is).
They refurbished a 1961 Probat UG15 roaster, which took them six months to find and thousands of dollars and another six months to repair and restore for operations. In their 2,100-square-foot roasting facility, they use greens mostly from Olam Speciality plus some from Royal NY. Their favorite coffee profiles are clean with a nice balance of sweetness and acidity, but they're not afraid of making a dark roast. Also available in a few Chicago area coffeehouses as well. |
