Danish owners, Allan Nielsen and partners Christian Deichgræber & Peter Lessél, established Copenhagen Coffee Lab in 2013. First as a Copenhagen micro-roastery, then also a coffee shop. It's now also a coffee shop with Danish owner/operators in Lisbon, Portugal.
They generally roast in a Northern European/Scandinavian style, true to their roots, using a hand-built Giesen roaster from Holland. They experiment a lot with their different green sources to find the right formula for the coffee flavor profile they prefer and have generally settled on a rough target of 7-9 days of post-roast rest as the peak of many of their coffees.
